Pastel is a food composed of a flour-based dough that forms an envelope, is filled and then fried by immersion in boiling oil. Originating in Brazilian cuisine, and of São Paulo origin, pastel is one of the foods most often found in street carts and popular shopping centers in Brazil, Portugal and also popular in the rest of the world.

The pastel, as we know it today in Brazil, originated in the 1940s through the descendants of Japanese immigrants in Santos, in the State of São Paulo as an adaptation of the spring rolls and the Chinese cuisine and Japanese cuisine guidelines, which they adapted the original recipe for spring rolls with pastries
